Ashley has 17 years experience as a traditional Fishmonger, and his wife Ruth trained at the Ballymalloe Cookery school, before becoming head fish chef at Doyle’s Seafood restaurant in Dingle, County Kerry, so yes ~ WE LOVE FISH!
The counter is laid out daily in a traditional style with locally sourced fish from our suppliers in Cornwall. They buy from the small ‘day boats’ as well as boats that use a line-only method to catch the fish which is kinder to both the fish and the environment.
We have also sourced for you to enjoy Dorset lobsters, crabs and other various shellfish not forgetting the famous River Test trout. To compliment this we offer the finest in international flavours from the most wonderful smoked salmon, lovingly prepared in Scotland to succulent tuna and swordfish steaks, sustainably caught by pole and long line fishing in Sri Lanka. As fish is seasonal there will always be a surprise or two on the counter waiting for you.
There is no need to be frightened either as we are more than happy to prepare the unknown and not so familiar fish to your personal requirements and then point you in the right direction with a tasty recipe or two.
Whether you fancy something simple, fresh and full of goodness from the humble mackerel to a feast of lobster and oysters fit for a king, Thyme & Tides aims to bring you all the classic foods of the sea.
